RSF is a mixture of mesophilic Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactis, Streptococcus thermophilus and Lactobacillus helveticus.
It is the L. Helviticus that imparts the extra flavour, the nutty flavour to the cheese. It is an adjunct culture that assists in breaking down the proteins in the maturing cheese. Not only does it impart flavour but it also enables the cheddar to mature more quickly which means less time on the shelf and more money in your pocket.
Finest Kind supplies RSF in 50U packets. The dosage for RSF is normally 50U per 500 liters milk. However, it is suitable for smaller quantities milk.
