Feta is a very forgiving cheese and a real win when you have extra milk you are not sure what to do with. The big advantage is that you can store it in the brine for many months. But if you are in a hurry to get your cheese to market, you can mature it in just 2 months. Remember that we have amazing herbs that you can add to your feta to make it a little different to what is already on the market. For example we suggest Stinging Nettle , Pesto, Greek Herb Mix, and Chilli .

White Daily has been specifically made by CHR. Hansen for Feta. It consists of Lactococcus lactis subsp cremoris, Lactococcus lactis subsp. lactis, Streptococcus thermophilus and Lactobacillus thermophilus. It is this combination that gives a high acidification speed, a high flavour and it is resistant to phage.

Finest Kind supplies  White Daily in 50U packets.  The dosage for White Daily is normally 50U per 500 liters milk. However, it is suitable for smaller quantities milk. When making Feta from 10 liters or there about’s, it is best to cut the corner of the packet open, measure out a teaspoon tip of culture onto a sterile spoon, fold the corner of the packet over and keep closed with a washing peg. Store the packet in the deep freeze in a closed container to avoid moisture entering the packet. We recommend the Large Rectagular mould for Feta that you would like to cut into blocks and the small circular mould if you are selling a small whole cheese.

Because it is freeze-dried it can be transported at room temperature for up to 10 days. Shelf Life is at least 24 months if stored according to recommendations.
