Whether you’re going to a tropical island or having a staycation with the family, Finest Kind has a smoothie recipe to keep you healthy this summer! Our interest was sparked by Wardee Harmon’s recipe in The Traditional Cooking blog post frozen summer fruit and kefir smoothie. With summer weather bringing the heat, this recipe is sure to keep you cool.
Wardee recommends you can use whatever frozen summer fruit you have available. For example Sugar Rosa Plums, strawberries, wild blackberries, blueberries… Any of your favourite fruit will do. The additional ingredients you will need are easily found at most stores.
Here’s what you need:
- 10 whole dates pitted
- 4 cups of frozen summer fruit
- 4 tablespoons coconut oil
- 3 to 4 cups kefir
- 1 tablespoon of vanilla extract (optional).
Once you have all your ingredients in order, you’ll need to place them in a high powered blender. It’s important that you put them in the right order for consistency purposes. Start off with pitted dates, frozen fruit and then the coconut oil. Try and blend this together a bit before you add the Kefir and vanilla. Then blend all ingredients until the mixture is smooth. Pour in your preferred glass and enjoy!
