Milase is a milk clotting enzyme derived from the fungus  Rhizomucor miehei.  Microbial enzymes work more efficiently if calcium is added to the milk.  Dosage is 2gm per 100 liter milk. 500g of Milase makes 2500Kg cheese. Milase must be stored dry and dark at 4°C. Milase is certified Halal and Kosher. No GMO products are used to make Milase.
