Ideal for making small cheeses like Gouda of approximately 300-400 gram. The whey drains through holes at the bottom of the mould. Eight cheeses can be pressed at the same time in the Finest Kind Press .  The small Gouda’s can ripen in just 3 – 4 weeks.  Smaller cheeses are better for testing new recipes or aging conditions.
